Half way through veganuary and getting stuck for meal ideas? Or just heard about the hype and want to have a little taste? The Green Guild has provided some of their favourite vegan recipes to spark some inspiration!
Why reduce your meat and dairy consumption?
Well for many reasons, not least because the meat and dairy industry contribute to 15% of global greenhouse gases – more than transportation, and is seen as the biggest method to reduce your environmental impact.
Tofu Noodle Soup
This tofu noodle from I Love Vegan is super tasty, is pretty simple to make and is great for those wintery evenings.
Top tip: It also works great with rice instead of noodles!
Quorn and Chickpea Curry
Quorn is a great replacement for those days where you’re missing something more solid and meaty. This curry from All recipes is full of flavour, and is also great the next day – once the Quorn has soaked up the sauce from the curry it is pretty difficult to tell the different between real and fake chicken.
Top tip: I’d recommend adding in any leftover veg that you have in the fridge (particularly that broccoli).

Easy Cajun Jambalaya
This heart-warming dish is fab for sharing with your housemates, or for putting in the freezer and saving for later.
Top tips: I love to add some chickpeas to add even more protein, as well as some courgettes.
Also, if you’re a bit of a wimp like me, there’s no need to use the hot sauce, it still tastes super good.
And for dessert…vegan chocolate cake!
This chocolate cake isn’t called the best vegan chocolate cake for nothing. I reckon it would rank highly in any non-vegan baking competition. It’s a proper people pleaser, with most people’s response: “This is vegan?!”
Top tip – it’s even better as cupcakes, bake them for 12-15 mins.
